Dietary inorganic nitrite/nitrite intake in a representative sample of Australian women, and cardiovascular disease risk.

Synopsis

Nitric Oxide (NO) is an important signalling molecule in the cardiovascular system and is vital for vascular function. Further, conditions of NO deficiency due to aging, diabetes and smoking are associated with the development of hypertension and atherosclerosis. Vegetables (especially beetroot and leafy greens) provide the richest dietary source of inorganic nitrate. Dietary nitrate can be utilized via the Nitrate-Nitrite-NO pathway to produce NO, indicating a relatively simple and cost effective method for restoring NO status.
